Did some boneless skinless chicken thighs tonight in the smoker. Used a rub and let them sit overnight sealed up in a vacuum bag.
Got the Mes fired up and put them in. Using a mix of cherry and apple pellets. Pulled them out when they were around 140 and added on the sauce.

It was a good dinner tonight.
Had with it a angle hair pasta with green beans to go for the veggie Yep. Dinner was good.
