UDS maiden voyage

    Got the UDS up and running this morning for her maiden voyage. I present to you the prize.

    After. It's so tender it was falling apart, of course I had to have the first taste. Boy oh boy is it great. It's foiled and resting right now.




    I had a tough time with temps for a while, to high. Then I made sure the lid had a nice tight fit and the problem went away. Lessen learned on that one.

    I did, at the two hour mark then at the four hour mark as per instructions here at SMF. It got stuck in the 160s for a while so I ended up taking a nap, woke up a couple hours later to find the brisket temp was just a hair over 200.

    Hey Rick thats not a miracle thats a perfect looking brisket. Well done my friend. Excellant choice of meat to break the UDS in.

    Thanks guys. A big well deserved thanks too all of you and the great info to be had on SMF. Wouldn't have had a UDS without all your fantastic help.

    Here is the final result, it pulled a part with such ease. It was very tasty. This was my first time using lump charcoal and I must say the results were above my expectations.

    That is fine looking brisket. So the ole UDS did her job well? How much lump (pounds) did you use . I have a UDS with only one cook on it so far. I want to do a brisket in it.

    I would have to guess it used around 6 lbs of Royal Oak in a 10 hour smoke. I started it with a chimney of briquettes but I found that to be to much as I had to fight to get the temps down. Today I started with a half a chimney and the UDS ran like a champ hovering around 230 to 240.
