Used Alton Brown breakfast recipe, with bacon, onion, garlic, peppers, potato stuffing.
Did pulled pork overnight and put these in in the morning along with some spares, outstanding.

thanks for the comments,
its hard to believe that only 2 lbs of meat and a little fat added to the grinder could make these sizeable fellas.

This might make me buy a real meat grinder instead of the slow stand mixer attachment.

Just ran across this in the Fattie section today- wow, don't know how I could have missed it. Never saw the posting.

Anyway, outstanding first fatties LennyK! Really liked the look of them once they were ready to slice.
