II am trying to make pulled pork for the first time I am planning to smoke to 140 degrees and finish in the oven. Now I have never used a thermometer for cooking before so my question is this. I bought a meat thermometer that stays in the meat throughout cooking process and on the box it says if more cooking time is desired take thermometer out before putting back in oven. Now does this mean I have to remove the thermometer from pork when I take from smoker to oven and if so can I put it back in and finish cooking or do I have to keep checking it. Any help would be much appreciated.
