Noobie, I was just given a MES 20070512, no remote. It came with a few different partial bags of wood chips, cherry, pecan, apple. After those are used I eventually want an AMNPS, just so I can leave it, from what reading I've come across. Being an absolute beginner to smoking are there a few certain meats that would be best to try on as Im getting my feet wet?
 
Welcome to the forum! When I first started I did ribs and pork butts several times before I attempted a brisket. The pork is much more forgiving. Good luck and have fun
 
Welcome to SMF from Ohio. Pork butt, pork shoulder for pulled pork is a good way to start. Buy yourself a good quality meat thermometer for starters.

The quicker smokes are easiest to learn on. Eye of round, wings, thighs, double smoked hams, burgers, and turkey breast come to mind. Good thermometers like a Thermapen and Thermoworks Smoke 2 makes smoking a whole lot more enjoyable.

You can smoke different things at the same time with good thermometers. Put the chicken on the bottom rack so that raw chicken juice isn't dripping on the other stuff.
