Lousy weather. Seams like a good time to try that Boudin I've been wanting to.
I cut up a 6# butt into pieces; 2# for my Boudin & 2# for the wife's breakfast sausage and freezed the rest.
After looking at about a millíon different recipes for Boudin I settled on one After getting it all together, I got the stuff in the pot. Then we made breakfast sausage for the Mrs. Time for mixing and stuffing... By the way, between my simmering, the wife's ham 'n beans and the Oak in the fireplace, the smells in the house are intoxicating!!
After stuffing, I laid them in a tamale pot I had from when I was into Mexican to finish. They came out pretty good, except for a blowout that was easily cleaned up by my fingers. Tasty! It's just a matter now of packaging and/or freezing. This is the first time I've ever tasted Boudin, it just sounded really good and I'm glad I did! Thanks to all the folks who post their ideas on this site!
