Hello SMF, my name is Johnny. I live in a small town in Florida and work as an industrial maintenance electrician and instrumentation tech at a local paper mill. My wife wanted a new smoker for christmas so I bought her the Oklahoma joes longhorn offset smoker. We just used it for the first time yesterday. I followed you guys directions on how to season it before we used it so I'm sure we did it right. The chicken leg quarters turned out great, but we used a PILE of charcoal. Any advice would be greatly appreciated.
