Tonight's fattie was so far my best. 3lbs of bacon weave, 2lbs of ground beef / pork mix, 1/2 lb of maple pork sausages, herbs n spiced to taste, basted with apple juice BBQ sauce mix. Smoked for 4hrs and finished on the BBQ. Only hiccup again is keeping the cheese from bubbling out. I used an "old cheddar" / Monterey Jack mix. I thought I had the ends stuffed in enough, but the cheese seems more powerful than bacon.
