game hens......

    here is a couple of li'l guys..........

    rubbed, trussed and ready for the smoker:

    here is another view of an easy way to truss a bird:

    crispy up the skin with the coals left over from the gasser:


    the end product.........

    yup.....frozen and on sale for $2.50 @ fry's

    gary, they take about 2 hrs....that's why i do them!

    this time pecan....i usually use cherry/apple mix. i thought they came out good.

    oh yea........

    tader.....what you see is pretty much it. i did brine them in salt and my rub for 2 hrs. after a quick rinse i then hit them with olive oil and more rub. put them in the gasser/charcoal vertical over pecan for 1.5 hrs.

    wait and see what i did with the left overs............

    Wow! Those look great. I have not done the game hen thing but is now on my list. Could ya fit 6 of those baby birds in a comp Box? Hmmm.
