Made these brats from the Poli recipe Elsie's Swiss Brats (find on his page)

I used 2lbs pork and 1 lb veal. I had to adjust the recipe for the 3 pounds. Make a patty before you stuff to your taste.

Here is my recipe....thought about using some beef....venison would have been even better...didn't have either so just pork which works out just fine.
1 Kilo ground pork

Salt (1.2%) 12. grams

Sugar (.1%) 1 grams (white sugar)

Nutmeg (.01%) .1 gram

Cinnamon (.1%) 1 gram

Black pepper (.5%) 5 grams

Red pepper flakes (.2%) 2 grams

Garlic powder (.1%) 1 grams

All spice (.1%) 1 gram

Red wine (Chaniti) or burgundy Quart or more
 
Yup those look great . That recipe is on my list . Just did the Nuremberg from his site . Really good .
I like the addition of ginger in that one .
