You can always slice up the flat and add some bbq sauce and head to the crockpot for some screaming smoked bbq brisket sandwiches!

Too bad about the flat. Have you checked your therm probes in hot water & ice water to make sure they are accurate. It’s hard to believe that a Prime brisket would not come out juicy. Maybe put it in a crock pot with some broth for a couple of hours, or as said above, it would make killer brisket chili!

I’m not sure it had an impact but I’ve been planning to replace the probes.

I think I trimmed too much fat, and there was a point during the smoke when the flat was about 2/3 probe tender and 1/3 was a bit tough.

And I’m not sure if it was 100% probe tender at some point and I missed it.
