DirtSailor2003-those look awfully good. What is your 5 spice recipe?Nothing fancy made a five spice garlic ginger marinade. Been marinating the wings for several hours now. Will put these in the Mini in a few more hours. Will be using Cherry and Pecan. I reserved a cup of the marinade that I will reduce down for a glaze. May add a Thai chile in there for some heat.

2-3 nubs of Star Anise, pepper (? I just grind it in until it looks like enough), brown sugar (1/4 cup +), ginger (fresh about a thumb sized piece sliced), garlic (3-4 cloves minced). 1/2 cup soy, 1/2 cup water (can use saki instead of water). mix together and simmer for 10-15 minutes. Add more sugar if needed to balance the saltiness of the soy. Sometimes I'll add half a stick of cinnamon. I have also been known to add fish sauce sometimes, but only if more salt is needed. Usually the soy is plenty.
Close to about half. I also add more brown sugar, and sometimes will add a few drops of sesame oil.

About how far do you reduce the 1 cup of marinade you have reserved? Then you baste your wings with it with about what...15 minutes to go?

Or I need to add a bit of heat to keep them away! A few thai chiles would add a nice kick to this recipe!
