Have been looking for some time and reading a lot about smoking not yet bought one, hoping to get a better idea as to what to buy. Interested in both hot and cold smoking.
Came across this forum and the information looks first class.
Based in Scotland.

Welcome to the forum and thank you for the contribution to the world of whiskey! I'm a big fan of the electrics. I have a MES-30 that I run a mailbox mod on. Set it and forget it smoking. I would recommend the AMNPS and independent thermometers. That's my 2 cents.

Clyde, welcome to the darkside. There are many options available. Allot depends on what's availability in your area, time you want to invest and, money you want to invest. Like Oddegan many have the MES, I have the WSM(weber smokey mountain) it's a charcoal bullet type smoker, other like pellet smokers, and still others go more traditional with straight wood burners. Any and all choices will accomplish what you want. Read the forums and you'll be amazed what information is available. Let us know when you narrow down your choices and we'll point you in the right direction.

It kind of depends on what you want to cold smoke, all the smokers will hot smoke just about anything. But if your interested in making sausage then you need to look into an electric smoker. They can hold the very precise temps needed to smoke sausage. If your just cold smoking cheese, lox, bacon etc. Then you have a much bigger choice, especially with the Amazen pellet smoker. http://www.amazenproducts.com/
Good luck!
