I’m going to spare everyone my long winded story I had typed up and stick with the down and dirty need to know stuff.
I found a fridge to use as a smoker, but after taking everything apart I found that the inner tub was rusted beyond a few patch panels for repair so I’m building a new tub out of 16 gauge steel.
I was pretty set on making this a pellet smoker but after talking with a few members about theirs and reading various posts I think I have decided to go electric. For smoke I will use either the AMNTS or the AMNPS.
Fridge details:
Cook chamber will be 53.5”x24”x16”
3” Roxul (unless you guys tell me otherwise)
6” Exhaust centered on the back wall at highest point
4” intake above heating element (needed?)
Questions:
How does this list look to set up my own system? Will I be able to cold smoke and be able to get it hot enough to crisp the skin on my chickens?

So that’s the meat and potatoes of the system. There are other small things but I don’t see the need to put you guys through that pain. If I missed something or if I’m way off please tell me now so I don’t screw up.
