Was a perfect sunny day and went well although trying to cook a brisket and making pulled pork in 6 hours is a feat and wasn't as tender as I would have liked. I built this 250 gallon last month and used Dave O's calculator. There was absolutely 0 difference heat variation between right and left side. Was super controllable on the temp too.
