I'm really interested in using my silver 22.5 as a smoker more. I have tried a few times but my temps get to high and I cook indirect. I used baskets and rails in it. I see people do a ring and mix in wood with the unlit coals. Can I use chips like this? Will it give off bad flavor if they aren't soaked? Do I need to close my bottom vent most of the way and only leave the vent on top open? Will my coals go out? Any help would be great. I do have a wireless thermometer I use in my meats. I like to cook anything really.
