So I have been hawkeyeing everything that has been going on here, and finally was able to put a roast on the grill and smoke the snot out of it.  I kind of went in blind becuase i dont have a therm but i kept it on a bit extra long but it still came out medium/med rare.  perfect for roast beef sandwiches.  came out excellent very smokey and the salt pepper and extra rub was just enough to give it flavor.  I would love to have an injector but baby steps first.  Well even if im not hooked (i am ) but my wife is hooked hard as well.  just wanted to throw out a thanks to EVERYONE on here as well as the e classes in my email for helping produce a finished product.

tbone, morning and welcome.....  Glad you found us....  The roast looks mighty tasty..... For not having a therm you did pretty good....  I expect we will see a lot more Q-views and more experiments in the near future..... How about taking the time to update your location and what equipment you are using for us to better help in the future should you have any questions ???  Your new addiction to smoking meats, cheeses etc. is a fun journey.... Enjoy the long smokey ride....   Dave

Looks like that roast came out real nice. Now the hook is set !!
