Do I have to let the food i.e. Fish , nuts cheese rest after smoking before I use the food saver? I did cold smoked salmon. Smoked 10 hrs after 24 hours in salt/sugar brine. And it went straight to food saver off from the smoker. After 24 hour in the fridge I sliced it . It was good ( after I cut off the hard top) but I thinks little too smokey. What did I do wrong? More time in fridge after it is wrapped?
