I’m going to spare everyone my long winded story I had typed up and stick with the down and dirty need to know stuff.

I found a fridge to use as a smoker, but after taking everything apart I found that the inner tub was rusted beyond a few patch panels for repair so I’m building a new tub out of 16 gauge steel.

I was pretty set on making this a pellet smoker but after talking with a few members about theirs and reading various posts I think I have decided to go electric. For smoke I will use either the AMNTS or the AMNPS.

Fridge details:

Cook chamber will be 53.5”x24”x16”

3” Roxul (unless you guys tell me otherwise)

6” Exhaust centered on the back wall at highest point

4” intake above heating element (needed?)

Questions:

How does this list look to set up my own system? Will I be able to cold smoke and be able to get it hot enough to crisp the skin on my chickens?

hey there, first post. I have a few older fridges/freezers and was just gifted another. A Gibson just like this no less. I plan to do a very similar setup to what you are working on.

I don't know much when it comes to smokers, but I was under the impression that for cold smoking you will need a separate "hot box" to get the air to temp and then push the smoke over to the fridge with the temp decreasing during the process.

Have you built yours yet?

some of the fridge builds I have seen they take the insulation out, not sure for the reason, but might be worth checking out. I have more research to do as well .

Welcome to the forum from another new guy! There are few ways to get the cold smoke you are talking about, some people use the mailbox mod with the AMNTS or the AMNPS and others just put it into the fridge and have it near an intake of some sort. I'm not sure the AMNTS or the AMNPS will heat the fridge enough so that's why people are adding some sort of electrical heating element when using that method.

I'm still waiting on my steel sheet to come in. Once it arrives I will be hitting the ground running to get this thing finished up.

As far as the insulation some people are removing and replacing the insulation because it's either old and musty/moldy/wet or not rated for the heat. I plan to insulate mine just so I'm using less energy to keep it heated.

Great! My issue is I don't want to use pellets, rather straight electric for heat. And chips for the smoke. I haven't found that to be sold yet. Maybe I'm looking in the wrong area. 
 
I use an AMNPS in my Bradley electric smoker. The other day, I smoked some sausages and the temperature in the cooking chamber got to over 110*F, just from the AMNPS. The ambient was probably mid 70s but the end of the smoke.

Your cooking chamber will be larger, but you will still get a fair amount of heat from the AMNPS if you want to cold smoke.

a couple of things ... if your doing the mailbox mod you won't need a separate intake vent in the bottom of the fridge...

Also.. If your THINKING (even if not) about doing sausage and snack sticks and such... consider this PID as it has ramp feature ... meaning you can have temps raised at preset times ...

JckDanls 07, thank you for that info. I thought the PID I posted had the ramp feature but I guess after all my reading I went dumb and posted the one that didn't have it. What do you think about this one?
