Purely curious -

From what I'm gathering (never cooked one) a standing "prime" rib roast, uncooked and sliced is essentially rib eyes, correct? 

" A standing rib roast, if sliced when uncooked, would yield a number of rib steaks. Rib eye steaks result from removing the bones and most of the fat and lesser muscles (tail)."

So, keeping it as a roast, how much difference is there between a rib eye (cooked) and "prime" rib roast (cooked)? Is the only difference is one has bone and the other does not? 

Just trying to understand the differences, and the prices some folks are willing to pay for "prime" rib roasts. 
 
Yep you got it! In todays market the name Prime Rib Is more of a descriptive name rather than a

grading of the meat. Sortof like "Chopped Sirloin Burgers"  The meat is not Chopped. It is actually ground meat in a patty shape. The word is used to "fancy up" the name. If you could find a prime rib that actually is from Prime graded meat you should buy it if you can afford it. It will be a real treat!

I probably could find USDA Prime, prime rib - but I have been getting USDA Prime, rib eyes for $7.99/lb. For about the same price as a Choice "prime" rib. 

What would you do?

It varies in my location from $7.49/lb to $7.99/lb.

I got mine for 6.99 today but they wern't prime,,

I couldnt find a bone in one, except one place they wanted 14.00  a pound..

I got a lesson today in the whole prime\choice  as well as the prime rib roast vs the ribeye's un cut.

Heck we here in florida I can get rib eye steaks whole for 6.89 a pound allday day long at sam's.  
 
As mentioned above, most Prime Ribs are USDA "Choice" cuts.  You can get them "Prime" cuts if you have a good butcher, but you have to request it.  The difference is in the marbling.  The higher quality cuts have a larger percentage of marbling and therefore come out more tender.  This is why Kobe beef is so valuable -- it can have up to 10 times the marbling of a USDA prime cut.
 
6.99 is a deal here every now and then around holidays they can be had for 5.99 bone in but you have to buy a whole one. Wouldnt bother me now to buy a whole one,, but before doing one no way...
