I did a search and there were tons of threads on spatchcock chicken smoking. Sorry for being lazy but I did not want to read all of them to find my answer. Is there a right and wrong way to cut your chicken. I have never done this but it sure looks like the way to go and would like to try this next.

All you need to do is remove the spine with some kitchen scissors. Then flip it over and take a sharp knife and pierce the cartilage of the breast bone. There are some videos online that will show you as well. Pretty easy

I prefer to use a knife over shears. Cut down each side of the backbone. Flip the bird over and press down with your hand to flatten it out. That's it. Save that backbone for making stock.
