Well, I've been lurking behind the posts checking out what everyone has to say and looking for tips and tricks to this art of smoking. I started off a few weeks back with a brisket flat to break in my MES 30. I must say that I surprised myself with a very tasty end product. I moved to ribs the following week with less than expert results (by my standards...although the family loved them). Come Thanksgiving, I made Jeff's buttermilk brined smoked turkey which turned out awesome! This brings me to this weekend...plans are for another brisket flat tomorrow...hopefully batting 99! I am headed out in the morning to pick up a 3" vent elbow to put on the vent to maintain a better temp because it is so windy here in OK. Happy smoking everyone!
