This is very simple but tastes delicious.
I change up the chicken each time. This time I went for skin on bone in chicken thighs.
I first sprinkle both sides well with Weber Kick'n Chicken seasoning and put it in the smoker at 280* using Hickory pellets.
When the IT of the chicken gets to 160* I pull them out and generously coat them with a 50/50 mix of honey and mustard.
Then I put them back in the smoker in a foil lined pan to keep from making a mess.
Then I crank it up to 350* until it hits an IT of 175*.
It always turns out great.
