So I didn't have much going on Saturday. Mrs. Red says to me, "I want you to reverse sear a couple of ribeyes this afternoon for dinner." I says, "OK, if I must."

These 2 she had in the freezer...any time she finds anything good on sale she'll buy up several and freeze. These get a little coat of Olive Oil and SPOG.
Into the pellet smoker @ 220* for 2 hours. I've got a mix of apple and hickory pellets in the hopper. I didn't enhance this smoke with the AMNTS.
At low and slow cooking temps (below 250*) , the Rec Tec makes plenty of TBS all by itself!
This shot is about an hour in.
After they smoked low and slow for a couple hours, I pulled them just long enough to remove the drip tray from the pit, put some foil down, and crank it up to grilling temp. With the drip tray out, it took less than 5 minutes to get the grill temp to 500*. The steaks went back on the grill, 3 minutes per side. This shot is right after the flip to side B. Nice grill marks!
Plated with some butter-sauteed new potatoes. One of my favorite meals!
