NYE Corned Beef & Cabbage

Seems we always make this on NYE and on New Years some pork and sauerkraut ...
Starting with a nice chunk .. 3 1/3 lbs ..
added to water in large pot and starting to boil ...
added flavor package included ..
added 6 peppercorns
added 4 garlic cloves
and will reduce to simmer for 50 minutes per pound

Just starting to simmer .. sorry, thought I took a pic if the chunk .. seems it didn't take
then will remove after 3 hrs

then add potatoes (halved) and carrots whole large onion quartered
till potatoes and carrots are almost done , then add cabbage , whole head quartered until all done ... will show pics later
we usually eat with honey mustard on corned beef and some sour cream on potatoes
 
I just did that corned beef dinner here. I loved the flavor of the pickling spice.. I was happy with the way it cured so nice..
I ate the whole pot of stuff myself for 3 days. :D
Oh.. I'm going to do some right now as a matter of fact. Before I have to freeze it.
Just do the meat and potatoes I guess. In onion and garlic water with a bit of pickling spice in a cheesecloth bundle. I have cheesy broccoli to go with in the freezer.. lol

Thanks John, also tomorrow will be some beans after looking at yours yesterday ,, will be some smoked country ribs over kraut , then will be soaking some pintos tonight, and with leftover hambone from xmas, and the add some ends from my country ribs at the end ..

Stores here always sell out the navy beans this time of the year. I had to buy Great Northern bean last week.. Lol or shop around.. my sister just made split pea and ham soup.. I like that too.

Just getting it all started ... if you hop a plane from Conn. to Tampa it will be done ... lol
then, you will be here for tomorrow's BBQ
