I wipe brined chicken down with a paper towel then apply the rub right away while they are still a bit moist.
I do not see any need to worry about the miniscule bits and pieces from dish towels and napkins. I have been using paper towels and paper napkins to wipe my mouth off with all my life. Hot dogs at the ball park and from vendors on the street come pre-wrapped with them. All dishes washed in my house are dried with dish towels. Just don't see the problem.
I have seen a study done on how much stuff an average person accidentally ingests during their lifetime and tiny bits of clean cloth and paper are the least of it. There's hair, dried skin, live bugs, dirt , grit, pollution, etc etc in fact we accidentally swallow a little bit of almost anything under the sun in our travels thru this world.
