My First Brisket

I picked up a "prime" grade brisket at Costco ... I found the most flexible, floppy brisket in the bunch. It weighed in at a little over 11 pounds before trimming. Its sitting at 9-1/2 pounds now. Last night I seasoned it up with Meat Church "Holy Gospel" rub (I love this stuff), and plan on starting the smoke tonight using oak. I plan on cooking it at 250F ..... this will be lunch for my group of friends getting together to watch the 49er's/Vikings game tomorrow.

Well, it's 10:15, and I'm fuming. The Yoder YS640S just will not light. I changed out the pellets 3 hours ago, and used a "new" bag of Traeger oak pellets I picked up 2 days ago. My first thought is that maybe I got a bag of pellets the hardware store kept outside, so I scooped them all out of the hopper, fed the remaining pellets through with the "feed" mode, and refilled and fed the hopper with pellets I've used, and KNOW are good.

IT WON'T LIGHT. It's in the lower 40's ... IDK if that matters,,, I even tried to help the ignition process with a propane torch, to no avail.

Deep breaths .... deep breaths ... 1..2..3..4..5.. FUC!^((**&$#!@#$%^^&

Plan B .... I'm off to the butcher shop in the early am to pick up some steaks to grill. In the mean time this poor beautiful brisket is going "Han Solo" in the chest freezer until I can trouble shoot my Yoder.

PS - thanks everyone for the interest. I wish I could of shared a better story with you in the morning, with a beautifully smoked chunk of cow. But it's not to be, at least for this weekend.

It happens :) you just have to roll with the nut punches life offers :) grill up those steaks and enjoy the games!
