My second round of prepping for sticks....(Got a third in the waiting line)
80/20 GB

Left is just a tad over 1 lb (for if I need any extra)
Middle (2 zipps) 2.5lbs ea
Right (2) 2.2lbs ea.......(something fancy)

Get these mixed up tomorrow.

Hang 2 hours, room temp

In smoker at 130* for 1.5 hrs. PID will do the rest.

I also have admired that mat. And I'm not sure what impresses me more....the breads, the sausages, or the eggs he coaxs out of the yard ladies.

Well ok then.

All the mix, prob as close as you can get to store bought.
And with the use of Bactoferm LHP-Dry.
nfpdm is very fine, dont need large chunks.

The cutting mats I use are throw away. Get a box of 30 for like $24 at Academy.
Pretty good and I have had some sharp knifes on em.

These are stuffed and ready for fermentation.

In my proofer for a 24 hour ferment.

And yes the girls are still dropping butt bombs.
These are in a week and half. Girls are molting so they slowed some.

Landjaeger stuffing this morning.
Both are PS Seasoning mix. Collagen casing 19mm smoked. I did not add any binder or ECA and did not press them.

First one is H&H LJ.

Second is Grandpa LJ.

Ok sticks are on the last batch.

Now get ready for a few chubs of SS.
