Hit my internal temp. Pulled them, cool down bath and now we wait for the bloom. Took 7 hrs almost to the minute.

Into the vacuum packer and the first batch is done. Thanks to all who followed along. It was fun doing it. Only problem was a few beer lost their lives in the process.:emoji_smile:

Wow! That is awesome set up! So jealous. Have my own wine room set up but not enough counter space for sausage making too. The kielbasa looks great! I have a batch in the fridge for tomorrow. Trying turkey and bacon mix. Will se.
