Mississippi Gulf Coast
Just wanted to say hi from the Mississippi gulf coast. I recently picked up an used Old Country Pecos offset for a good price and then did a few modifications and refurbished it. My wife and I smoked some sausages, chicken thighs, and chicken breasts just to see if we could get the fire management down without ruining a pricey cut of meat. I don't think we did too bad for it being both of ours first time smoking something. Why I waited until I am nearly 54 I have no idea, besides lack of patients.

Welcome to SMF glad you joined us. Looks like you did a great job cleaning and painting that smoker. Looks like some pretty good food on it as well what's in the foil?

We had thick chicken breasts that we smoked for 1 1/2 hours and then put butter on the bottom side and wrapped them until they cam up to 160 degrees.
