hey everybody,
just thought that i will post up and say hi after lurking for over a year.
i am using a Chargiller Smokin' Pro with great results.
i have been smoking for about 18 months and cant get enough.
Most of what i have been doing is dry curing and smoking pork belly so i have adapted the Smokin' Pro to run on propane but retained the ability to use charcoal and wood. The only reason for the gas is to maintain temps in the bitter Canadian winters here in Alberta. believe it or not even when its -10F i can still keep it at 170F in the un-insulated smoker.
