It's at 158 IT right now.. ECB is 243. .... I did 86 the skin.. but hope the crust is good. Didn't want to worry about skin blocking flavor or being stuff.. Lol..

It's a bit of work.. but nice slices with no bones.. I think it's worth the work..I am just catching up from the weekend.
