Wanted something a little differant though I would try Italian beef sandwiches had this 3.5 lb chuckie in the freezer rubbed it with Italian seasoning, onion salt, oregano, and minced garlic. Smoked at 225 using mesquite if had just been me and the wife would have pulled at 140, but others in the family don't want any red,

I had a pan with water, sliced onion, and the rub spices under to catch the drippings. I foiled it and the frig overnight, thin sliced and reheated in the liquid for lunch.

The Samies were a hit, learned a little to refine the results and next time I will plan ahead and make my own Hot Italian Giardiniera
