Tonight's dinner was chicken fried steak with country gravy, mashed taters, and steamed broccoli.
2 cups of flour
1 tsp salt
2 tsp pepper
1 tsp baking powder
2 tsp poultry seasoning
Mix together in bowl.
In another bowl
2 cups milk
2 eggs
1 tsp pepper
Few drops of Franks hot sauce.
Dip cube steaks in liquid mixture. The dredge in the flour mixture.
Put in skillet that has a couple inches of oil at 375 degrees.
Cook until browned and 165 degrees.
Nothing fancy with the country gravy. Used 2 packs of a dry mix. Mixed in 4 cups of water. Brought to low boil stirring constantly until thickened. Tasted, and added pepper.
There is never enough pepper in these mixes!
Fresh broccoli steamed. Added a bit of butter. And drizzled some spicy vinegar on top. I found that adding the baking powder really helps getting the breading nice and flaky and crunchy.
