Here is a trick I got from a friend to invert the sticks in the drying chamber.

Loop hitch on one stick then half hitch on the other stick. put the hook through the loop and hang. The half hitch pulls tension on the loop hitch so it will not lose grip...
 
After drying finished, I tasted a sample piece...

I'd go ahead and put the whole 750mL bottle of jack in the mix since 40% of that volume is alcohol and most of that will cook off when smoking. The flavor is in the other 60%...

Might back off on the black pepper just a tad to let the bourbon come through a little more. Could increase the herbs by 30% or so....but if you like the herbs as an accent, it's good where it is.
