Man, you guy's and gal's have some great ideas for smoking meats.I'm kinda new at this and I love it.I have a horzontial Char and grill pro smoker.I'm still getting use to it.The hardest trick is maintaining the heat.I was looking at some treads and come across some smoker mods that I'm going to try.I like the baffle idea at the entance from the fire box.Smoked some pork today with peach wood and I must say,the peach wood gave off a very pleasant smell and the smoke flavor was very mild and nice.Thanks to all of you for the grate info!
