Baby Backs were on sale at my local grocery store so I grabbed some and decided to smoke a rack on the AKORN yesterday. I planned on using the 2-2-1 method but actually went with a 2-1.5-.5 and they still came out to fall off the bone for me. I mean there was ZERO pull, the meat fell off even while i was cutting them. My temps were a bit higher than normal and i actually had to fight the smoker the entire time. It was a very frustrating cook to say the least, temps were 225-255 and went up and down as I chased it the whole time.
I rubbed them down the night before, spritz them at the beginning, one hour, before foiling and actually did something pretty neat. While the ribs were in the foil I poured the last of Jeff's Sauce i made into my small cast iron pan and reheated it in the smoker before putting it on the ribs. The flavor was out of this world!
Besides chasing the temps and the ribs being waaayyy to fatty (that's what I get for going cheap I guess) it was a good smoke that tasty awesome in the end!
