Hello everyone, I have always que'd a full Brisket up to now.  Wal-Mart was having a sale on Flats so I thought I would give it a try.  This is a 5 1/2 pound flat.  It turned out really moist and full of flavor.  If I'm strapped for time I think I will do another one of these.  Sorry I got the photos out of order.    Hope you enjoy the pic's.......John

Here it is just after being rubbed and injected and put to rest for a while.


Here it is just getting ready to get carved up after resting.

Just pulled at IT 155 ready to foil and put back on until IT 195.
