Hello, I am cooking a 7 bone prime rib on my Oklahoma joe offset barrel smoker Saturday. I plan to cook it at 250 till the internal temp is 125-130. I just can't seem to nail down a estimated cook time. Hope someone can help. I'm using hardwood lump charcoal. It weighs 19 lbs. Thanks in advance
 
Here it is, been drying for a couple days. Will rub it tomorrow

That's a big chunk of beef and I'm sure someone will be along to help with your timeline.....but not me 😄.
Might cut it in half or even thirds for better crust and flavor?
And be sure to post pics of the process!

I would guess about 4 to 5 hours...It's the same thickness ( give or take ) than one with less bones..I know that sounds quick . A 4 bone roast should cook in around the same time frame as a 7 bone roast..This site schooled me on this very question in the past.. Don't forget to post of pictures of the cook !!

I’ve never cooked one that big I usually do 7 to 8 pounders. If it were mine I’d cut it into two roasts. 250 is a good temp that’s usually what I run. Watch them closely as they can reach temp quickly. They will chug along and be at 105 and in ten minutes will be at 120. That’s been my experience. You don’t want to overcook that beauty.

Are you planning on searing at any point? If you’re reverse searing pull it at about 120 if you’re target temp is 130 or so. Best of luck!

How long does a 7-8 lbs usually take, approximately
 
I will add mine have always been boneless. I think the bones may shorten the cook time as they will absorb heat and contribute to the cooking. Others may say differently I can’t speak from experience on that.
