Bought a 2-pack at Costco. Ready for a rub
All rubbed up (SPOG)
Into the WSM she goes.
Should take around 3 hrs.

All done with a reverse (not so good looking) sear. 3 hrs on the money. IT of 144 (that's a good temp to suit everyone's tastes)
Juicy and VERY tasty.
Tri tip, the best beef next to a nicely prepared brisket? Perhaps. Have a bite!!
