Doing an early Thanksgiving meal. We have both sides of the family coming in for Thanksgiving. First set is in this weekend, so we're having a meal tonight. 16# turkey is on the smoker. Brined it for 12 hours in 2 gallons of water + 2c salt, 2c sugar, little garlic and onion. Dusted with black pepper, salt, and a little garlic and paprika. Cooking at 300 with a mix of oak and cherry. Mmhmm.
