Hey Everyone,

I have been lurking on the forum for some time but I just got my smoker in today and I am seasoning it now, an MES 40. I bought it from Sam's Club. The first thing that I did was do a boil test for the meat probe which read 211 at a full boil, so dang near dead on. However, I set the MES 40 to 275 and the probe is reading 310, so I will have to be checking it. I have an oven thermometer that I will double check with it too. I may buy a Maverick, but, not yet. I have never had a smoker before but I did have a smoker box for my Weber Genesis but that didn't really do what this will.

I plan on buying an AMZNPS for it soon to keep things as easy as possible. I'm looking forward to doing some pulled pork soon and I bought a book on sausage making and I plan on doing a fair amount of that. The more time I spend on this site, the more projects that I want to do. Never thought I would make my bacon, now I can't wait to do it.

Anyway, glad to be a part of the SMF community and I look forward to posting some nice Q-view.

Glad to have you aboard. I am also the proud owner of the MES 40.

I am a total novice at smoking, but with the MES 40 I have never had a failed meal.

Everyone on here as been a great help and there are so many ideas out there. I love it.

Hopefully you will too.

Welcome aboard Adam! Don't sweat the temp on your MES therm. I don't think there's an MES out there thats accurate. Just test the different areas with a probe therm so you know whats what. Example my 3rd rack in my MES is actually 12-13 degrees lower than my MES therm says. Tons of MES users here and all willing to help you if you have questions.
 
I have the MES-30 and the probe turns out perfect results every time. Your probe is probably just fine. They were designed to be buried in meat. My probe will always read higher then my heat setting when it is not being used in a meat cook. You have a winner there. Enjoy it. Happy Thanksgiving to the smoking community!
