Big crowd at my sons this weekend and I was on chicken. 10 pounds of wings on the WSM. I dusted these with weber kickin chicken and at the end I slapped a little open pit on them. They got rave reviews. I used both racks of the WSM and although flipping all the wings a few times was a bit of a juggling act , it worked out ok. I smoked a few dogs on here too and the guests who got those told me they were really special. One guy said " these taste like the hot dogs my dad used to grill" And I said your dad probably cooked on charcoal. And he said , oh yes , always ! It was a pretty good day , lots of good food and people having fun....and a few of these.
