Well, every once in a while, a deal comes along to good to pass up! My buddies and I were getting down to the last of the pork we processed this spring, and figured we would get more from the Hutterites again. We misplaced the number!! So I get a text from a friend who saw pigs for locally sale online. The looked more like boar, so I called to figure things out. The owner tells me that they are indeed pigs, Heritage pigs, not interbred. The reason he was selling them? They were from an unexpected litter, that they now had no room for.
I thought the add was a misprint, so I called back, to place an order, and asked his wife when she answered the phone. Yup! $100 each!! SO I confirmed with the boys, and took four. We had to go down and take care of them ourselves, so after putting them down, and dressing them, we got them home, and skinned them out. There were two red, and two black.
Let them hang overnight, then spent the next day butchering and packaging. Ribs, chops, roasts, loins, hinds will be brined for ham in the next couple days, and all the trim we kept for sausage. Let the adventure begin, and Qview will follow.
