Pizza Brat Venison Slim Jims

    Making some pizza brat sticks from some of the venison.

    Here is the mix from Excalibur

    Supposed to be fresh but i added 1 t cure #1 to the mix.

    4 lbs of venison with 1 lb fatty poke butt cut in.

    To whooped to smoke today. Do tomorrow.

    This is the lube i use on my stuffer gears and main rod as well as for my grinder end shaft.

    Got these stuffed. They smell really good. The mix has dried tomato chunks in it.

    Going to put a mild smoke tomorrow on them.

    All done for my GA friend. The excalibur mix is pretty good. These will be better tomorrow.
