While I've been BBQ'ing for a few years now, I am fairly new to SMF and with the rule here "no Q-View, didn't happen" I just completed my 1st official smoke. Today I smoked Game Hens on my new MES. Here is how it went: Here are the hens when I started. Then I rubbed them using Song of the South rub. My favorite for chicken. Here they are on the smoker. I smoked them at 250 for about an 1 1/2 hours then mopped them with KC Masterpiece BBQ Sauce and raised the temp to 275 for a half an hour to temp. Then I took them off Supper Meat was moist and tender. Thanks for looking. Also thanks here for all for their ideas and techniques. They turned out awesome.
