but an old timer to the craft. wanna introduce myself, from iowa originaly but now reside at the southmost tip of illinois and work in paducah ky. i build, move and remodel homes and also do maintence for a real estate office in ky. my latest smoker is a great outdoors brand smokey mountain series. got it from a house we cleaned out after the dr. who rented the place left it there. i have modifed one of the side air intakes to allow me to attach a metal bread box i cut to fit the air intake and allow offset cool smoking. i do alot of cheese. my goal is to continue smoking the not thought of smoked items. i enjoy suprising others with a tidbit smoked. so far only green olives have been rejected by me, but a teen boy loved them. i ask for any input of what you have smoked that i might not have thought of, and what you have smoked that didnt taste well afterwards. i sure enjoy smoking a butt for the week and the continued flaverful meals all week long. hope ya all are having a good weekend!!! hammer
 
Hey hammer welcome to the SMF family. I use a GOSM meownself and have outfitted my unit with a Char-griller SFB, now I can use propane or charcoal.

BTW-I split your post off of the other thread, this way more folks will see your introduction and have a chance to give you a proper SMF welcome.

PS -- My first Que experience many moons ago was right where you are. (Paducah area - Starnes, Leigh's east of there)

I'm a bit of an old school boy myself, so, I stick with thins like pork butt, brisket, fatties, chicken an such. It's great that yer smokin other thins, besure ta keep us posted on yall creations, It'll add a bit a diversity ta the forums.
