New to smoking, not to enjoying

Hi everybody. Been enjoying smoked meats all my life - especially pork ribs and Texas brisket, I'll have mine wet please. Not real easy to find here in Central California so I must start doing it myself. Been grilling all my life but smoking is what I crave. Bought an electric smoker (Masterbuilt 30" digital) to start trying to satisfy that craving. I've lived all over the country - my father was career Army and I travelled during my 9 Navy years - and love the regional varieties of smoking that have evolved. My wife of 35 years is not as much of a fan, opting for chicken almost every time, so i will be looking for ways to expand her culinary experiences. I look forward to learning from all of you and hope, in time, that I might be able to contribute to the conversations. Thanks TulsaJeff for your visionary establishment of this site. Looking forward to interacting with fellow smoke cravers!

Welcome...You are going to want a smoke generator for them Briskets. Feeding a MES every thirty minutes gets old on a 12 hour smoke. Depending on which generation MES you have decides best way to go. Model # ending in 10 or 11 an AMNPS Maze inside the MES is great.. Model # ending in 12-15 the AMNTS Tube seems to work better. Of course there is always the ever popular Mailbox Mod with Maze. Thanks Chef JimmyJ - was wondering how I was gonna handle that job. Maybe invite the kids over and put them to work but a smoke generator sounds like the way to go.
Did some pork ribs and chicken last week and was very happy, chicken and brats today - still looking for good source if brisket.
Thank for the welcome - hope to get more involved soon.
