Didn't really have plans for Smokin tonight, but was having withdrawals since I didn't get to smoke over the weekend! While grocery shopping I found (2) 2 pound packs of 80/20 on sale 1/2 off as the pull date was tomorrow. Picked those right out of there and decided that meatloaf was going on the Mini!!!! Hot temp smoke to try and get this 4 pound beast done. Trying to get rid of last tears KF Blue over purchasing (mini owners don't need to stockpile, lesson learned). Cherry, pecan wood. 344-365. Took about 2-2 1/2 hours to hit 145. Probed a few other spots and wasn't done so glazed with some sauce I made a few days back and let those spots hit 150. For the loaf 4 pounds 80/20 GB 1 1/2 cups pre-cooked quinoa half onion finely chopped 8 mini bell peppers finely chopped. 8 Clive fresh garlic minced Salt Pepper Ketchup Mustard Worchestershire ENJOY!!!
