Smoking a 50# whole pig Sunday and I wanted to get some thoughts from the purists on this site. What is the preferred ratio of vinegar to apple juice in an injection? I know some (i.e. myron mixon) prefer at least 4:1 apple juice to vinegar. I was thinking 1:1 (in addition to salt, rub, mustard, sugar etc.) because I like the taste and the vinegar helps break down the meat. Any other opinions out there?
